Sun Dried Tomato SoupIn England, Heinz is the big soup producer not Campbell's. My favorite soup is their tomato soup which I can't reproduce and is not available over here. I had bought a large jar of Sun Dried tomatoes from Costco (the same price for their huge jar as for a jar 1/4 -1/3 of the size in the supermarket) and they had a recipe for sun dried tomato soup on the label. I varied it slightly for the ingredients available in this area and my husband thinks it's the same as the Heinz soup. I don't think it's the same, excellent though this is, but then I was a Heinz tomato soup addict.Ingredients
Method1. Place tomatoes, tomato juice and half and half in food processor and run until tomatoes are smooth.2. Pour liquid into saucepan and gently bring to a boil. 3. Add whipping cream and return to a boil, turn down to a simmer and add sherry and some freshly ground white pepper - white pepper looks nicer than black pepper. 4. Taste and adjust seasoning and serve warm not hot with chopped basil if desired. I found that this soup mellowed overnight and tasted better than when first made. This makes only about 2-3 bowls of soup for a taster session.
