Taco Dip

Like many stay at home moms with small children, we look on playgroups and social clubs as our lifeline and sanity breaks. Twelve years ago, new from England with an eighteen month old, it was my way of discovering where to shop and getting translations from American to English of a wide variety of things. My questions would normally start, "Don't laugh, but?" Of course, food was always the central theme at any get together particularly any involving husbands. Many of the dishes were very different to us, but I made sure I got the recipes of the good ones. This is one of them. In my hand written cookery book, I call the recipes by the name of the friend who first made it. So thank you Beth. The cheese mix is also good on baked nachos with strips of chicken, lettuce and tomato. You won't find much left.

Ingredients

  • 8oz softened cream cheese (lite is fine)
  • 1 c sour cream (lite is fine)
  • 2 tsp. onion soup powder mix (Lipton/Knorr)
  • 2 tsp. Taco/Salsa Sauce - medium strength or stronger to your desire
  • 2 teaspoon cumin (cumin is not a hot spice, just tasty)
  • 2 c shredded orange cheddar
  • 2 large tomatoes chopped up small or grape tomatoes
  • 1 c finely shredded lettuce

Method

1. Mix cream cheese, sour cream, onion soup powder, taco sauce and cumin and spread in bottom of 9" pie plate or equivalent dish.

2. Top with cheddar in one layer followed by layer of lettuce and layer of tomatoes.

3. Serve with tortilla chips.

I find that when refrigerated the cream cheese mixture stiffens up so the tortilla chips break when you try to scoop the dip. I prefer to leave a spoon with small plates so that guests can take a portion onto a plate and then use the chips. Using 2 teaspoons of medium strength taco sauce only gives a nice flavor and is not hot, so you can use a hotter sauce or more. Everyone likes this proportion.
