Spring Into Summer!

I was sitting at the computer trying to decide what to write about for this issue of New Hampshire Seasons that should be coming through your mail box just before Easter in most places. Hopefully, the majority of you will have already decided on your Easter meal. And let's be honest. For most of us, Easter, whether Christian or Orthodox or Passover, is the same as Thanksgiving and Christmas and any other important celebration - we don't have much choice in the overall menu.

Perhaps we are allowed to improvise a bit but that is all. If we have younger children they want the continuity of the same meal from the previous year and hearing the stories of when they (or us) were younger. If you have taken on the responsibility of cooking the celebration meal from your mother (who, of course, is going to be there) then woe betide you deviating from the menu and the way it has always been prepared. Then the worse culprits are the family members that are normally away from home and who insist that everything has to be made just so, even if they are only going to show up for five minutes.

So, I thought I would share with you some variations on a theme that you could enjoy at another family party or a get together with friends. These recipes are straightforward, won't keep you in the kitchen for very long, and don't make a lot of dirty dishes. Doesn't that encourage you to try them?
