Make, Bake and Take Gluten Free Baking Class

Milford High School

Join Milford High School's Culinary Arts Department Award Winning Pastry Chef Cheryl Emerson and Award Winning Chef/Instructor Oonagh Williams for a class in Gluten Free baking.

Chef Oonagh adapts her regular recipes to gluten free for her son who is both gluten and lactose intolerant. Chef Oonagh also teaches people with gluten intolerance to understand labels and make their kitchen gluten safe. We will also discuss alternate gluten free flours and sources.

Please be aware that all ingredients will be gluten free but our teaching facility is not gluten free. All bowls, measuring cups etc will have been washed in the dishwasher, and all working surfaces carefully cleaned.

In this hands-on class students will leave with a variety of their own prepared baked goods, as well as the ability to recreate them at home. Please wear sensible clothes and closed toe shoes. All ingredients, pans etc. provided.

All the recipes will be made using regular ingredients plus Gluten Free ingredients easily available locally. Three of the recipes use Chef Oonagh's Gluten Free flour blend.

Everyday yeast bread with a mix of gluten free flours including brown rice flour, sorghum, almond flour and flax seed meal for better nutrition. Also Lactose Free. These yeast breads only require an electric hand mixer at home, no bread machine is required.

Sweet Variation of this yeast bread with cinnamon, raisins and nuts. Please note we normally use walnuts but we do have almonds and pecans for those with nut allergies. Also Lactose Free.

Chocolate brownies made with chocolate and cocoa. (can be made lactose free).

Sugar cookies/Snickerdoodles/Vanilla wafers. (can be made lactose free).

Pumpkin Tea Cake - moist cake with pumpkin, spices, fruit and nuts. Also Lactose Free.

This fun class is limited to 12 people. The low cost of $85 per person includes coffee and pastries on arrival, all the instruction, ingredients, take home breads and pastries.
