Yeast bread and French pastry dough class

Join Milford High Schools Culinary Arts Department Award Winning Pastry Chef Cheryl Emerson and Award Winning Chef/Instructor Oonagh Williams for a special baking class.

We will continue our successful bread baking class by offering a baking class of two different yeast breads plus two French pastry doughs that form the base of many fabulous desserts. Plunge your hands into the yeast dough and learn to mix and knead bread that is successful every time. Bake your own fragrant yeasted bread; learn shaping techniques for other successful loaves, and understand how ingredients work together to create breads of loft and delicious flavor.

In this hands-on class students will be provided with full written instructions and will leave with a variety of their own prepared baked goods, as well as the ability to recreate them at home. We'll be sure you've got a recipe to match your style! Please wear sensible clothes and closed toe shoes. All ingredients, pans etc. are provided.

In the morning we will make two yeast breads - perhaps a sweet Swedish tea ring (rich sweet dough with dried fruit or sweet spices) then a savory calzone/stromboli - bread dough with pepperoni, ham, salami, parmesan, roasted red peppers etc as fillings. Calzone is like a giant turnover, Stromboli is like a filled savory jelly roll with similar meat, veg and cheese filling as a calzone.

Then after lunch, we will make choux pastry (cream puff dough) into éclairs perhaps with custard filling and chocolate glaze. There are so many things that can be made with choux pastry once you've mastered the technique - profiteroles, beignets, aigrettes, gougère, Gateaux St. Honoré, Gâteaux Paris Brest.

The second pastry would be rich French sweet pastry made into upside down French apple tart, known as tarte tatin, (given a New England kick with maple syrup) which was originally baked in a cast iron skillet on top of an old fashioned wood stove in a bee hive style oven.

This fun class is limited to 12 people. The low cost of $85 per person includes all the instruction, ingredients, take home breads and pastries, plus lunch of a hearty soup with rolls.
